Air Fryer Vegetables

I was short on time and there weren’t many vegetables in my fridge last night but I wanted something healthy. While heating up my air fryer on 400 degrees for five minutes, I chopped up some peppers, onions and mushrooms.

It wasn’t exactly what I wanted but it ended up tasting way better than expected and the health benefits were a bonus.

I added a leftover piece of chicken to the vegetables and had a great meal in less than 10 minutes.

Many of my clients struggle to eat enough vegetables. If you can shift your thinking so that you’re always looking for a way to get vegetables into your meal (whether you’re excited about them or not) you may be surprised by the way you start to feel.

The more variety and colors you can add to the vegetables you eat, the better. They each offer slightly different vitamins and phytonutrients.

If you have them in the fridge, you exponentially increase the likelihood of getting them into your body!

Ingredients:

1 sweet onion, cut in half and then thinly sliced
1/2 of each: red, yellow & orange pepper
approximately one cup of baby bella mushrooms, sliced
EVO olive oil spray
salt and pepper to taste

Directions:

  1. Preheat the air fryer for 5 minutes at 400.

  2. Add all vegetables to the air fryer and spritz with olive oil. Add salt and pepper to taste.

  3. Cook for 6 minutes at 400 degrees, shaking halfway through.

Add a lean protein of your choice and your meal is ready.
