Easy & Delicious Quinoa Recipe

Quinoa is an ancient grain and a nutritional powerhouse. It’s a low calorie, plant-based, complete protein. It’s also a good source of fiber, antioxidants, and vitamins.

Sometimes quinoa can be a little bit bland but this recipe adds flavor to the grain and is super easy to make.

Ingredients:

1 cup of quinoa (can be any color or multi-color)
1 13.5 ounce can of organic unsweetened low fat coconut milk

Directions:

  1. Rinse quinoa in a colander for approximately 30 seconds.*

  2. Empty coconut milk into a small saucepan and bring to a boil.

  3. Add quinoa, reduce heat to medium-low, cover and simmer for approximately 15 minutes or until the coconut milk is mostly absorbed and the grain has sprouted.

  4. Enjoy with vegetables of your choice as a side, or use the quinoa as “rice” and top with stir-fry vegetables.

    *We initially had some trouble finding a colander small enough to drain the quinoa without it simply going through the holes but did find one at the Different Drummer kitchen store in Northampton that has worked really well for all small grains that need to be rinsed.
