Peach Salsa

We recently had a Blue Apron meal that featured shrimp tacos with peach salsa. While the overall meal was very good, the peach salsa was amazing and creates a wonderful compliment to chicken, salmon or any other type of fish.

It’s super easy to make, it’s healthy and it was delicious.

Ingredients:

1 large ripe peach, pitted and diced
1 small lime, squeezed into juice
2 scallions
1 jalapeno, deseeded and chopped
2 tsp extra virgin olive oil
salt and pepper to taste

Directions:

  1. Combine the diced peach, the sliced green tops of the scallions, the juiced lime, olive oil and as much of the jalapeno as you’d like (depending on how much heat you want in your salsa).

  2. Season with salt and pepper as desired

  3. Use as a side or a “marinade” with seafood or chicken or simply add to some cooked rice.

This recipe was designed to accompany two fish tacos when we originally made it. We loved it so much that we would use 2 peaches the next time we make it. I would also double the scallion and might drizzle a little bit of extra olive oil after tasting it with the 2 tsp. It probably doesn’t need another jalapeno unless you love them and like your salsa really spicy. Enjoy!
